Fg1 is very soft. Sp101 is machined very well. If your subfloor is flat it will sot perfectly
Its only problematic when you use a poorly manufactured product or you install it over a unsuitable subfloor

We use to put a red pad on first and then the paper. Sometime bit of spray or contact tape but it usually holds it

So did he see the subfloor on the survey? Did he put a level over it and discuss with you?
When the walls come out the floor is often miles out. Did the builder discuss that with you? Did the floorlayers see the subfloor after the wall...
Would of been cheaper to get a builder to redo your subfloor if you want It level. Sp101 ply and levelling compound is expensive and has limits
Its a nightmare to get accurate readings with a hygrometer on anhydrate. Its like a sponge. You may need to get a carbide bomb test
